Viognier

Planted on a median terrace dating from the end of the Riss ice age (150,000 years ago) and the lower terrace 10 to 15 metres above the current level of the river, in soils made up of large plaques of coarse alluvial deposits around 4 metres thick, covered in a layer of silt from post-glacial flooding. This terroir enables each variety to express itself with finesse and freshness.

Cultivated and vinified with a minimum of intervention.

Picked in the early hours of the morning to take advantage of the coolest part of the day and preserve all their aromatic potential.

Slow fermentation at controlled temperatures of around 18°C for 12 to 15 days.

Aged on lees with regular stirring.
